I must admit I disturbed him quite a bit with my admiration and endless questions... but you can understand — this was an experience that takes you far beyond your comfort zone. We spoke to him through Google Translate. Not everything this wonderful and unique chef served us was familiar or even recognizable. Kobe beef — the most prestigious meat in the world — was served over a bed of lettuce salad: breathtaking. Persimmon pickled in alcohol, homemade miso soup with radish, smoked radish, exquisite fish... There was also a sweet dish that I suspect was made from candied chestnuts, like in a Mont Blanc cake — or “vermicelli,” as the Swiss call it — and more. We also enjoyed a dinner featuring his signature beef dish, accompanied by clam miso soup. The place is very close to the famous hot springs, but if you want to touch the soul of Japan — this is it.
