Symi town is basically a big harbour surrounded by numerous bars and restaurants. The village is set on the hillside with many steep staircases, it is very picturesque. My wife and I enjoyed it and will definitely return. The Nos beach is small and stony however there are many taxi boats available to take you to other beaches if you want. Warning If you arrive on a large ferry there are no transfer available and it is a 20 minute walk into town or 35 minutes to the far side of the harbour, most unpleasant on a hot day with suitcases.
